2 ripe bananas, mashed 1/3 cup melted butter 1/2 cup sugar 1 egg, beaten 1 tsp vanilla extract 1 1/2 cups all-purpose flour 1 tsp baking soda 1/2 tsp cinnamon 1/4 tsp salt 1/3 cup milk

Preheat oven to 375°F. Line a 12-cup muffin pan with paper liners or grease lightly.

In a bowl, mash the bananas until smooth. Whisk in the melted butter and sugar. Next whisk in the egg and vanilla.

In another bowl, whisk together the flour, baking soda, cinnamon and salt.

Add the dry ingredients to the wet ingredients alternately with the milk, mixing just until blended.

Scoop the batter evenly into the prepared muffin cups, filling each about 3/4 full.

Bake for 18-20 minutes until a toothpick comes out clean.

Cool muffins for 10 minutes in the pan, then transfer to a wire rack to cool completely.
