3 cups cooked rice  2 tablespoons vegetable oil 1 cup mixed vegetables  1/2 cup diced onion 2 cloves garlic, minced 2 eggs, beaten 3 tablespoons soy sauce 1 tablespoon oyster sauce (optional) 1/2 teaspoon sesame oil Salt and pepper to taste Green onions, chopped, for garnish

Prepare the Rice: If you don't have leftover rice, cook the rice according to package instructions and let it cool.

Chop the vegetables and have everything ready before you start cooking. This will make the process smoother.

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Push Vegetables to the Side: Push the vegetables to one side of the skillet, making room for the eggs.
