Tasty Recipe For Homemade Tortilla Soup

2 tbsp olive oil 1 yellow onion, diced 3 cloves garlic, minced 1 jalapeño, seeded and minced 1 lb chicken breasts or thighs 4 cups chicken broth 1 (28 oz) can crushed tomatoes 1 (15 oz) can black beans, rinsed and drained 1 (15 oz) can corn, drained 1 tsp cumin 1 tsp oregano Juice from 1 lime

Add olive oil to a pot, heat on medium and sauté onion for 3-4 minutes.

Add garlic, jalapeño and cook for 1 minute more.

Mix in chicken, broth, tomatoes, beans corn, cumin, oregano. Stir well and bring to a boil.

Reduce heat to medium-low and simmer for 15-20 minutes until chicken is fully cooked.

Remove chicken and shred into pieces using two forks. Return to pot and stir.
