Preheat your oven to 400°F. Line a rimmed baking sheet with aluminum foil. Place a wire cooling rack inside the baking sheet or directly on the foil.
If desirable, distribute brown sugar and pepper evenly over the bacon.
After 15 to 20 minutes in the oven, crisp the bacon to the desired degree. I favor mine with a slightly chewy center.
Before serving, remove from oven and allow to chill for 5 minutes on the cooling rack. As the bacon cools, it will become marginally crispier.
Crumble it over salads, roasted potatoes, eggs, burgers, and other foods. Enjoy on its own.
Baked bacon may be refrigerated for an additional 5-7 days. Before serving again, it may be reheated in the microwave or oven.
