3 ripe bananas, mashed 1/2 cup (1 stick) unsalted butter, melted 1 teaspoon baking soda Pinch of salt 3/4 cup granulated sugar 1 large egg, beaten 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork or potato masher.
Melt the butter in a microwave-safe bowl or on the stovetop. Add the melted butter to the mashed bananas and mix well.
Add the baking soda and pinch of salt to the banana mixture and stir.
Add the sugar, beaten egg, and vanilla extract to the mixture, and mix until well combined.
Gently fold in the flour until just incorporated. Be careful not to overmix; a few lumps are okay.
Pour the batter into the greased loaf pan and spread it evenly.
