Best Broccoli Cheese Soup Recipe

1/4 cup unsalted butter 1/4 cup all-purpose flour 2 cups milk 2 cups chicken or vegetable broth 1 small onion, finely chopped 2 cloves garlic, minced 3 cups fresh broccoli florets, chopped 2 carrots, peeled and grated 2 cups shredded cheddar cheese Salt and pepper to taste

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until they become soft and fragrant.

Sprinkle the flour over the sautéed onions and garlic, stirring constantly to make a roux.

Gradually whisk in the milk and chicken or vegetable broth, ensuring there are no lumps.

Add the chopped broccoli and grated carrots to the pot. Simmer for about 15-20 minutes or until the vegetables are tender.

Reduce the heat to low, and gradually stir in the shredded cheddar cheese until it's fully melted and incorporated into the soup.
